To make quinoa, convey 1 cup of water to boil in a small lined pot. Add 1/2 cup quinoa (white, purple, or multi-colored), and let simmer about 12 minutes till water is absorbed and grains are tender. Drain any remaining liquid. Makes about 1 1/2 – 2 cups.
Substitute kidney or pinto beans for the black beans, or use cooked barley, bulgur, rice, or farro as a substitute of the quinoa.
In the event you’re in a rush, purchase precooked quinoa that is useful 1-cup servings.
To substitute home-cooked black beans for the canned beans, use 1 ¾ cups cooked beans instead of the drained canned beans.
This dish could also be served heat by heating all components in a saucepan for 3 to five minutes, solely till heated by.
